Rakott Tészta – Hungarian Baked Dessert Noodles

- 250 g (9 oz) wide egg noodles
- 500 g (1 lb) túró (Hungarian farmer’s cheese) or well-drained ricotta
- 150 g (¾ cup) sugar
- 4 large eggs, separated
- 200 ml (¾ cup) sour cream (plus extra for topping)
- 1 tsp vanilla sugar (or 1 tsp vanilla extract)
- Zest of 1 lemon (optional, traditional)
- 80–100 g (½ cup) raisins (optional)
- 40 g (3 tbsp) butter, melted
- Pinch of salt
- Breadcrumbs or butter for greasing pan
