  1. Mix Ingredients:
    In a bowl, whisk the eggs. Add the shredded coconut, coconut milk, honey (or banana), baking powder, vanilla (if using), and salt. Mix until well combined.
  2. Transfer to Mold:
    Pour the mixture into a microwave-safe mug or ramekin (lightly greased).
  3. Cook:
    Microwave on high for 2.5 to 3 minutes, or until the center is set. (Microwaves vary—check with a toothpick.)
  4. Cool & Serve:
    Let it cool slightly. Enjoy as-is or top with a dollop of yogurt, fresh berries, or a drizzle of melted dark chocolate.
