
Instructions:
- Sauté the onions:
In a large pan, heat the oil or lard over medium heat. Add the sliced onions and sauté until soft and translucent, about 5–7 minutes. - Add paprika:
Remove from heat briefly and stir in the Hungarian paprika (this prevents it from burning and becoming bitter). - Add peppers and tomatoes:
Return to heat. Add the pepper rings and cook for about 5 minutes, stirring often. Then add chopped tomatoes and garlic (if using). Cook for 10–15 minutes until everything softens into a stew-like consistency. - Season & serve:
Season with salt to taste. If using sausage, add now and simmer until it’s cooked through. If using eggs, stir them in and cook until scrambled in the sauce. Serve hot.

- Add scrambled eggs for a protein boost
- Serve alongside meat or as a vegetarian main
