Hungarian Haluski (Káposztás Tészta)

In Hungary, this is called káposztás tészta (literally “cabbage pasta”). It’s often seasoned generously with black pepper and sometimes a little sugar for balance.

Ingredients (4 servings)

  • 1 medium head of green cabbage, shredded (about 6 cups)
  • 1 large onion, finely chopped
  • 8 tbsp unsalted butter (or half butter, half oil)
  • 300 g (10–12 oz) egg noodles or homemade wide pasta
  • 1–2 tsp salt (to taste)
  • Freshly ground black pepper (plenty — this is key to the Hungarian flavor)
