Instructions:

  1. Make the batter:
    In a mixing bowl, whisk together the eggs, milk, water, salt, sugar, and vanilla (if using). Gradually add flour and whisk until smooth and lump-free. Let it rest for 20โ€“30 minutes for best results.
  2. Heat the pan:
    Use a non-stick or crepe pan. Lightly grease with oil or butter. Heat over medium heat.
  3. Cook the crepes:
    Pour a ladle of batter into the pan, swirling to coat the bottom thinly. Cook for about 1โ€“2 minutes until edges lift, then flip and cook the other side for 30 seconds.
  4. Serve warm:
    Fill with your favorite sweet fillings like:
    • Apricot jam
    • Nutella
    • Sweetened ground walnuts or poppy seeds
    • Sweet cottage cheese
    • Dust with powdered sugar or drizzle with chocolate

Savory Tip:
Skip the sugar and vanilla if you want to fill them with savory meats, cheeses, or mushrooms.
