- Preheat Oven:
Preheat your oven to 375ยฐF (190ยฐC). Grease a 9×13″ baking dish. - Cook Beef:
In a skillet, cook ground beef and diced onion over medium heat until browned. Season with salt, pepper, and a little garlic powder if you like. Drain excess fat. - Layer Casserole:
- Place a layer of sliced potatoes on the bottom of the baking dish.
- Spoon half the beef mixture over the potatoes.
- Repeat with another layer of potatoes and the rest of the beef.
- Mix Sauce:
In a bowl, mix the cream of mushroom soup with milk until smooth. Pour evenly over the casserole. - Bake Covered:
Cover with foil and bake for 45 minutes. - Add Cheese & Finish Baking:
Remove foil, sprinkle cheese on top, and bake uncovered for an additional 15 minutes, or until cheese is melted and bubbly and potatoes are fork-tender. - Rest & Serve:
Let it rest for 5โ10 minutes before serving. Garnish with chopped parsley if desired.

- Add a layer of frozen veggies (like peas or corn) between the beef layers for a full one-pan meal.
