
Here’s the traditional Székely Gulyás 🇭🇺 — sometimes called Hungarian Treasure — a hearty, tangy pork and sauerkraut stew with paprika and sour cream. It blends flavors from Hungarian goulash and Transylvanian cuisine, named after the Székely people of eastern Transylvania.
Székely Gulyás (Hungarian Treasure)
Ingredients (Serves 6)
- 900 g (2 lbs) pork shoulder or pork butt, cut into bite-size cubes
- 2 tbsp lard or vegetable oil
- 2 medium onions, finely chopped
- 2 cloves garlic, minced
- 1 tbsp sweet Hungarian paprika
- ½ tsp hot Hungarian paprika (optional, for heat)
- 1 tsp caraway seeds
- 2 medium tomatoes, chopped (or 1 cup canned diced tomatoes)
- 2–3 cups sauerkraut, rinsed and drained (adjust to taste)
- 2–3 cups chicken or pork stock
- 2 bay leaves
- Salt and pepper to taste
- 200 ml (¾ cup) sour cream
- 2 tbsp flour (optional, for thickening)
- Fresh parsley for garnish
