Ingredients (Serves 6–8)

  • 250 g (9 oz) wide egg noodles
  • 500 g (1 lb) túró (Hungarian farmer’s cheese) or well-drained ricotta
  • 150 g (¾ cup) sugar
  • 4 large eggs, separated
  • 200 ml (¾ cup) sour cream (plus extra for topping)
  • 1 tsp vanilla sugar (or 1 tsp vanilla extract)
  • Zest of 1 lemon (optional, traditional)
  • 80–100 g (½ cup) raisins (optional)
  • 40 g (3 tbsp) butter, melted
  • Pinch of salt
  • Breadcrumbs or butter for greasing pan
