🍓 Strawberry Banana Pudding Cookies

Ingredients:

• 1 (3.4 oz) box banana cream instant pudding mix (dry)
• 1/2 cup unsalted butter, softened
• 1/2 cup granulated sugar
• 1/4 cup brown sugar, packed
• 1 large egg
• 1 tsp vanilla extract
• 1 1/4 cups all-purpose flour
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1/2 cup white chocolate chips (optional)
• 3/4 cup freeze-dried strawberries, crushed slightly

Instructions:

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Add the egg and vanilla extract, and mix well.
4. Stir in the banana pudding mix (just the powder).
5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture.
6. Fold in the white chocolate chips and crushed freeze-dried strawberries.
7. Scoop dough into tablespoon-sized balls and place on the baking sheet.
8. Bake for 9–11 minutes, or until edges are lightly golden. Let cool completely.
