🥞 Palacsinta – Hungarian Crêpes

👨🍳 Instructions:
- Make the Batter:
- In a bowl, whisk together flour, eggs, milk, sparkling water, melted butter, sugar (if using), and a pinch of salt until smooth.
- Let rest for 20–30 minutes.
- Cook the Crêpes:
- Heat a lightly greased non-stick skillet over medium heat.
- Pour a ladle of batter into the pan, swirl to coat the bottom evenly.
- Cook 1–2 minutes until edges lift, then flip and cook another 30 seconds.
- Repeat with remaining batter.
- Add the Filling:
- Spread your choice of filling over each crêpe.
- Roll up or fold into triangles.
- For savory version, pour warm paprika sauce over the rolled crêpes.
🍽️ Serve:
- Sweet ones warm or cold, dusted with powdered sugar.
- Savory ones hot, with extra sauce on top.
