๐Ÿ“ Ingredients:

For the sponge cake (6โ€“7 thin layers):

  • 9 large eggs, separated
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour, sifted
  • Pinch of salt

For the chocolate buttercream:

  • 7 oz (200g) dark chocolate, chopped
  • 1 cup (225g) unsalted butter, room temp
  • 1 cup (125g) powdered sugar, sifted
  • 1 tsp vanilla extract

For the caramel topping:

  • ยพ cup (150g) granulated sugar
  • 2 tbsp water
  • 1 tsp lemon juice or butter (to prevent crystallization)
