1. Melt:
- In a saucepan (or microwave-safe bowl), combine chocolate chips, peanut butter, and butter.
- Heat gently over low heat (or in 30-second microwave intervals), stirring until smooth and fully melted.
2. Mix:
- Remove from heat and stir in vanilla if using.
- Add rice cereal and stir until fully coated in the chocolate mixture.
3. Set:
- Pour mixture into a parchment-lined 8×8-inch pan.
- Press down gently into an even layer (use a spatula or wax paper).
4. Chill:
- Refrigerate for at least 1 hour, or until firm.
- Cut into squares or bars.

- Store in the fridge for a firmer bar, or at room temp if you like them a little softer.
- They keep for up to a week — if they last that long!
